The bubbles are fine and pleasant in the mouth. Endowed with a pleasant brilliance; the grain of the perlage is fine, with good persistence. The bouquet marries fresh aromas of acacia, green apple and white peach with buttery and nutty notes, due to its particularly long aging on laths. The palate it is creamy, with a complex finish characterized by a light taste of hazelnut and brioche. It’s a gastronomic wine: round and very complex in the mouth.

Created in 1975, the AOC Crémant de Bourgogne covers the entire Burgundy wine region, from Chablis to the gates of Lyon. Crémant De Bourgogne is produced using the traditional method; the still wine is bottled with yeasts and sugar, followed by secondary fermentation. Trénel’s Crémant de Bourgogne is fermented in stainless-steel tanks and subsequently aged in bottle for 36 months on laths, three times longer than what is decreed in the AOC’s specifications.

This extra aging time add more structure and greater fineness to the wine, as well as finer bubbles. Crémant de Bourgogne producers are working to increase the style’s prominence and overall quality. In 2013, two new categories were introduced: Eminent and Grand Eminent Crémants. The wines need longer aging on the lees after bottling, 24 months and 36 months respectively, compared with the minimum nine months required for standard Crémant. By these standards, Trénel’s Crémant de Bourgogne may be sold as Crémant de Bourgogne Grand Eminent
