Clearwater Cove Merlot 2014
The 2014 Clearwater Cove Merlot shows broody notes of dark plum with spicy high tones. The palate is plush and welcoming with ripe and juicy red fruits, Christmas spice supported by supple tannins.
This low yielding Merlot was picked at optimum ripeness. The parcel was cold macerated at 6 - 8 degrees for five days before being warmed and inoculated with selected yeasts. A fast, hot fermentation proceeded with regular hand plunging and pumping over which helped craft a wine with elegance and balance. The parcel was then gently pressed off when the desired tannin extraction was achieved after a period of time resting on skins. A portion of the parcel spent time in second year French oak barrels while undergoing malolactic fermentation. The resulting wine underwent a light fining then was blended and filtered prior to bottling.
The fruit that produced the 2014 Clearwater Cove Merlot is sourced from a small low cropped block in the Hawke’s Bay grown on free draining gravels.
Beneath the cliff at the edge of our vineyard the cool clear waters of the South Pacific Ocean carve into the coastline. Deep coves provide precious shelter from year-round winds that whip the waves and buffet the surrounding landscape. In these beautiful but harsh conditions our vines struggle for survival; producing low yields of high quality fruit with concentrated flavours.
