The Mitolo Serpico McLaren Vale Cabernet Sauvignon 2021 is a bold and distinctive expression of Cabernet Sauvignon, crafted using the traditional Italian appassimento method. This technique involves partially drying the grapes before fermentation, concentrating the flavors and softening the tannins, resulting in a wine of remarkable depth and complexity.
In the glass, it presents a deep garnet hue. The nose is rich and brooding, offering an array of aromas including black fruits, bay leaves, chocolate, warm earth, cigar box, aniseed, and subtle oak influences. On the palate, it is full-bodied and structured, with flavors of plum, blackberry, and dark cherry at the core. The tannins and acidity provide a firm backbone, delivering a savory and serious mouthfeel. The wine's texture is surprisingly supple, with excellent length and focus, promising years of pleasurable drinking ahead.
Critically acclaimed, the 2021 vintage received a 94-point rating from Winepilot, highlighting its unique aromatics reminiscent of powdered herbs like tarragon, spearmint, and lavender, complemented by flavors of sweet dried berries. The tannins are described as fine and dusted, contributing to a fascinating and delicious wine.
Aaron Brasher of The Real Review awarded it 92 points, noting its dark, brooding aromas of blackberry, mulberry, sweet spice, dried herbs, cocoa powder, and bramble. He describes it as full-flavored, dark-fruited, powerful, and structured, with a decent amount of structure, savoriness, and serious mouthfeel.
With an alcohol content of 15.5%, the 2021 Serpico is both approachable now and has the potential to age gracefully over the next decade. It pairs beautifully with hearty dishes like grilled meats, rich stews, or aged cheeses, making it a versatile choice for various occasions.
