Palate Profile

Taylors pinnacle Cabernet Sauvignon is named in honour of Bill Taylor Senior, Taylors founder and visionary, whose ambition to craft wines that stand tall amongst the world's best continues to guide them today. The Taylor family were really inspired by the great wines of Bordeaux, particularly the long lived Cabernet Sauvignons. So with this in mind, Mitchell Taylor expressed a desire to his chief winemaker that Taylors craft an extraordinary wine that represented the utmost refinement of this noble grape and truly embodied his grandfather's original vision. 

The wine was only to be produced in what was deemed exceptional quality vintages and to ensure its rarity, in extremely limited volumes. The Visionary Cabernet Sauvignon that has been created is not only a pure expression of the unique Clare Valley terroir but also the skill and craft of their winemakers, who understand exactly what it takes to achieve greatness.

In the glass The Visionary displays a dark red-black core framed by a crimson rim.

On the nose the wine is attractively scented with wild berry and bramble hints backgrounded by light chocolate and mint notes with a subtle smoky cigar air from extended premium oak maturation.

On the palate it delivers a focused, upfront berry and summer fruits profile that jumps straight to the centre of attention and is counterbalanced by a mouth-watering freshness. There is a ripe and highly integrated tannin and oak firmness to the focused, long finish. This wine has lovely dimensions and a poised elegance and depth that reflects it’s carefully selected provenance, vinification and cellaring.

Critic Awards

Deep, rich crimson colour with a good tint of purple. Blackberry and various dark fruits with a patina of tobacco and toasty development and a very subtle lacing of mint. It's quite sweet in the centre from very ripe fruit, while the overall flavour showing the beginnings of mellowness. The tannins add a savoury feel and a clean, drying finish.

This wine offers a deep well of aromas from cassis and black cherry fruit to mint, tarragon, black olive and graphite. There's a lift of acidity on the palate that's almost unexpected alongside the plush fruit. The tannins are powerful and chiseled but well placed, ensuring a long life in the bottle, until 2035, at least.

Extended skin contact and malolactic in barrel evinces both authority and a creamy palate-feel. Then, cabernet's potpourri of herb-doused tannins mingle with currant, olive and graphite to pencil lead scents. Following 12 months in new French wood. A barrel-by-barrel selection was made. The result is both salubrious and persuasive.
