Bursting with energy, the palate comes as a prelude. The champagne boasts a rare richness and complexity and delivers itself with great reserve.

Precise, full, textured by a structure with an almost tactile feel, Dom Pérignon's Plénitude P2 2000 unfolds into a long, sappy finish punctuated by a delicious bitterness, with notes of liquorice and toasted malt. A fine Dom Pérignon Vintage and a brilliant Second Plénitude that exhibits a coherence and an extraordinary dimension.

Dom Perignon’s first ‘Plénitude’ of its 2000 vintage was first released in 2008, to critical acclaim, but not all of the vintage was bottled, leaving some of the wine to age for an additional 10 years. The result is the P2, its “Second Plénitude’; a second expression of the 2000 vintage that is fuller bodied, more complete, more harmonious and coherent. Sixteen years of slow aging have given the champagne more depth and created something surpassing even the original release.

Critic awards

Medium golden yellow with silver reflections and a fine bubbly stable mousse. On the nose there is fine bakery, a touch of orange and stone fruit, fine nutty aromas, very multifaceted, mineral nuances. Complex, juicy texture, rich on the palate and endowed with extractive sweetness, fine acid core, notes of yellow tropical fruit, a delicate touch of caramel, hazelnut oil and dry herbs on the finish, a wine of great complexity and length, perfectly developed.

A Champagne that has turned to a very fine texture with dried pineapple and lemon character. Medium to full body, complex and flavorful palate. Shows length and beauty. Pie crust, cooked apple and lemon rind continue on the finish. A truly great 2000 with a combination of finesse and strength. It’s very, very minerally to a point of sea salt. It was disgorged in first half of 2016. Drink or hold.

Medium deep golden colour with tiny fine bubbles. Mature and complex nose with a fine toastiness, no oak but rather maturity/lees contact with notes of nougat, hazelnut, ripe fruit like pear, apricot, citrus comfit and some chalky notes. The palate has good grip and weight, medium to full with high flavour intensity a silky creaminess, fresh backbone with rounded acidity, sweet citrus, ripe stone fruit layered with nougat, nuts and brioche. Good harmony, depth and a long intense finish.

"The 2000 Dom Pérignon P2 is drinking beautifully, wafting from the glass with complex and gently reductive aromas of iodine, lemon oil, tangerine and oyster shell that have begun to develop appreciable tertiary nuance. On the palate, it's medium to full-bodied, deep and expansive, with a broad attack, incisive acids, a classy mousse and a long, precise and mouthwateringly saline finish. The year 2000 delivered a precocious Dom Pérignon, and this recently disgorged rendition has really benefited from the additional time sur lattes, acquiring notably more complexity--while retaining more energy--than the original disgorgement. Given its maturing profile I would plan to drink bottles within the next decade."
