The Mitolo Savitar Shiraz 2021 is a commanding expression of McLaren Vale Shiraz, crafted from select parcels in the region's south-western Whites Valley district. Named after a mythical dragon, "Savitar" embodies power, polish, and an elegantly long tail.
In the glass, it presents a deep garnet hue. The nose offers notes of chocolate, mocha, dried herbs, spices, tobacco leaves, and well-integrated oak. On the palate, it is full-bodied and powerful, with ripe dark berry fruit contrasted by dark spices and meaty undertones. The wine is structured with firm yet balanced tannins, ensuring length and persistence through to the finish.

"The Mitolo winemaking crew has stepped up into the major league with this highly polished release. Selected parcels from its source vineyard in the Vale’s south-western Whites Valley district get the royal treatment, a large proportion of new French oak in play in the winery offering its typical influence in the finished wine with finessed tannins, a minerally char and toast, yet still room for its rich dark plum fruit and acidity to drive intense drinking pleasures long into the future. Exciting stuff." -

"Apparently Savitar is a mythical dragon. Nothing too mythical about the wine, it is real and really good drinking. It spent the best part of two years in a mix of new and older oak, mostly French. Under diam. A dark garnet/maroon, this is a wine of concentration, power and intensity. The nose gives us notes of chocolate and mocha with dried herbs, spices and tobacco leaves, as well as some oak which is well integrated. Impressive balance with a supple texture and fine tannins. There is some serious persistence here. Well structured, this is a very fine McLaren Vale Shiraz from an excellent year. Great stuff. This is going to drink beautifully for at least ten to fifteen years."
With an alcohol content of 14.5%, the 2021 Savitar Shiraz is both approachable now and has the potential to age gracefully over the next decade. It pairs beautifully with hearty dishes like grilled meats, rich stews, or aged cheeses, making it a versatile choice for various occasions.
