    Profile

    The wine has a lovely shimmer with a pretty golden colour with green reflections. The rich and complex nose is characterized by pleasant and subtle floral and mineral aromas. It has a wonderful structure in the mouth with minerality, and charming chardonnay-typical aromas. It is a harmonious wine that is not only fine and elegant, but also has an excellent aromatic persistence. Best appreciated cold with oysters, shellfish, fish, and/or goats cheese.

    Founded in 1840, Maison Simonnet-Febvre owns vineyards in Chablis, Chablis Premier Cru Mont de Milieu and Chablis Grand Cru Preuses. It is a traditional Chablis winery amongst the oldest in the area. Bought by Maison Louis Latour in 2003, it is nowadays led by Paul Espitalié who managed to inspire a new dynamic while keeping its independence by running it as a separate enterprise with its own house style.

    Critic Awards

    Nicely focused with notes of almond cream, pineapples and pie crust. Salty hints. It’s medium-bodied, textured and dialled back on the fruit. Drink now.

    Notes of lemon blossom, yuzu and slight notes of citrus zest associated with touches of dried citrus fruits as well as a very fine floral and saline hint. The palate is fruity, mineral, saline, suave and offers a certain roundness. On the palate this wine expresses notes of lychee, quenette and small notes of bright vine peach associated with touches of juicy/sweet mandarin as well as fine hints of zest and sweet grapefruit. Good length.
