Made with Aiyama 愛山 sake rice, with its signature soft sweetness and fuller body, mildly polished down to 60%, the sake is stored after brewing all through the spring and summer, gaining richness and a layered maturity. This Hiyaoroshi is rich and deep with a lush and rounded mouthfeel, perfectly enjoyed with Japanese autumnal fish like sanma, kampachi & the widely celebrated matsutake mushrooms.
