Palate Profile

Situated on the right bank of the Serein running on from the Grand Crus, it is exposed to the West / South-West which produces ample and harmonious wines with a slight mineral note.

Simonnet Febvre Chablis 1er Cru "Fourchaume" 2019 displays the charming character of the "Fourchaume" terroir. Notes of ripe fruit, hazelnut, and on the palate, roundness ending in a very long finish carried by a delicate and salty acidity. As an aperitif, or with fish in sauce, it also easily accompanies white meats in sauce or veal and rice.

Founded in 1840, Maison Simonnet-Febvre owns vineyards in Chablis, Chablis Premier Cru Mont de Milieu and Chablis Grand Cru Preuses. It is a traditional Chablis winery amongst the oldest in the area. Bought by Maison Louis Latour in 2003, it is nowadays led by Paul Espitalié who managed to inspire a new dynamic while keeping its independence by running it as a separate enterprise with its own house style. .

Critic Awards

This has the chalky minerality and the touch of austerity you expect from Chablis, but also super balance of ripe and fresh components that glide gracefully over the palate. Long, delicately salty finish. From organically grown grapes. Drink or hold.

Sun-drenched yellow apple and pear flavors are edged by hints of dried citrus peel and spice in this plump, fleshy expression of Chablis in a hot vintage. Vinified and matured entirely in stainless steel, it balances bold fruit tones with a stony backbone and bright lemon acidity. The wine is ready now but should drink well through 2028.

On the palate this wine expresses notes of bright flat peach, plump and juicy Mirabelle plum and small notes of crushed, fresh yellow berries combined with fine hints of fresh apricot, crisp nectarine as well as fine hints of white flowers, a subtle hint of racy, almost saline minerality and a discrete hint of toastiness (in the background). Almost tannic on the finish/persistence (both in aroma and structure). Good length.
